The Book of Pies 1580-1660 Volume 1 by Stuart Peachey from the Seventeenth Century Food Series published by Historical Management Associates © 1995. ISBN 1 85804 058 2.
The Book of Pies is a single 128 page book divided into two separate A5 booklets. Volume 1 subtitled Pastry and Meat Pies includes the Introduction and the Contents pages for both volumes and starts at page 1 and ends at page 64. Unfortunately, we do not have Volume 2 which is subtitled Fish, Dairy, Egg, Fruit and Vegetable Pies, Tarts and Florentines. Volume 2 includes at the end of the book a list of abbreviations that identify the sources used.
This work lists pie and tart recipes from many period works. Where one or more cookbooks have clearly copied from one another with no significant differences only one recipe is given but all references are listed. Many of the recipes and ingredients use the language and spelling of the period and also mention ingredients that may not be readily obtainable. Anyone wishing to reproduce one of the dishes may need to use a little imagination in interpreting the text.
Condition virtually as new but with some minor scuffs and marks to the cover and page edges and slight corrosion to the staples.
